Healthy, Easy, Divine Chocolate Macaroons



What an honor to be guest blogging for my beautiful wife, Josie. Valentine’s Day is her favorite day and chocolate is serious business, too. So you know these must be damn good.

They’re easy and fun to make, simple, raw, healthy and very hard to keep around. Like Josie said, get extra ingredients because you’ll want to make them again. OK, let’s get down to business.


Ingredient List:

Honey (1/2-3/4 cup, depending on your sweet tooth)

Coconut Oil (1/3 cup)

Shredded Coconut – (3 1/2 cups)

Salt (1/2 teaspoon)

Vanilla Extract (1 tablespoon)

Cocoa (2/3 cup)

Almond Meal (1/2 cup)



So, the first step is to add the honey and coconut oil in a small sauce pan. Let me clarify, that’s local, unrefined honey and organic, virgin, unrefined coconut oil if you want to keep it as classy and healthy as possible. IMPORTANT: Keep the heat as low as you can so you don’t damage the enzymes in the honey.

As soon as this is liquefied you can add it to a large mixing bowl with your (organic) shredded coconut in it. I like to do a mix of fine and course. The finely shredded is easier to handle but the course gives a special crunch factor (I’ll leave this exciting decision in your capable hands).

Next you add your unprocessed salt (regular table salt is processed, stripped of nutrients, and dyed so start using the real stuff for everything), vanilla extract, cocoa, and almond meal (if you want to put some whole almonds in a coffee grinder or food processor you can make your own). Again, keep it classy and go organic.

Yay, time to stir! Get the big guns out and make sure all ingredients are well mixed. Now the messy part: Use your spoon and one hand or both hands to make balls or cookie shapes and place them onto a parchment paper-lined cookie sheet. I expect perfect heart shapes for Valentine’s Day (just kidding, there’s no way).

Now all you have to do is stick ’em in the freezer for 20 minutes and, VOILA! Store them in a tupperware in the fridge and don’t let your wife eat all of them. They make a great dessert but also a very filling snack. Have fun!
